About and notes
Who someone is goes into About. What they said on a day goes into a note.

A person has two places for what you know.
About
Who they are: what they like, their family, what matters to them. It stays true for a while, so it sits in its own card next to the History. Change it with Edit (⌘E).
Notes with a date
What someone said or what happened on a day: “The pilot budget is approved for January”, “Moving to Berlin in spring”. Choose Add note on the person (⇧⌘N). The note shows in the History next to your touches, with a yellow note symbol. Click it to change or delete it.
A note is not a touch. The warmth bar and the next reach-out stay as they are. A call or a meeting you had is a touch: log it instead.
Or tell the assistant: “Marco mentioned the budget is approved for January.”
